This is something my mom and I used to make when we wanted something fast and easy, yet savory.
For one person, say, two servings….
- 1/2 an onion, diced
- 1 chicken breast, cut up in small cubes
- soy sauce
- 1/2 c white rice
- whichever oil you like to fry things in. I use canola. (extra virgin olive oil has too low a burn point)
- Cook rice according to package instructions.
- Heat skillet and add oil
- When oil is warm, add onions and lower heat to medium so they don’t burn. When they start go get golden, add chicken and seal. Cook for a bit and add soy sauce. You should pour enough that the chicken is covered, but not too much if you don’t want it reeeally soy-y. Or do what I do, which is I add 1 part water for every 4 parts of soy sauce. Let it bubble. Cook this for about 5-8 minutes. Check chicken is done. If so, ready!
Serve this over the white rice and whatever nice veggie you like.
